The quintessential spice blend in Indian food which is personalized by each household. This spice mix is easily available in most grocery stores, but making it takes your dish to the next level.


INGREDIENTS ( MAKES 3-4 TBSP.)

2 cinnamon sticks

6 black cardamom pods

8 green cardamom pods

1-star anise

6 cloves

1 mace

12 black peppercorns

1 teaspoon of fennel seeds

1 tablespoon of black cumin seeds


INSTRUCTIONS

Combine all the spices.

Toast them on medium heat until darker in color or fragrant. (Approximately 2 minutes)

Blend into a fine powder.

Cool and store in an airtight container.
