AUTHOR’S NOTES
A classic simple chicken curry. This method is used with many other dishes.
INGREDIENTS (SERVES 4)
2 lb. chicken thighs cut up in bite-size pieces
2 red onions diced
8-10 cloves of garlic minced
2-inch piece of ginger grated or minced
3 tomatoes diced
1 bay leaf
Salt to taste
1 tbsp. coriander powder
1 tsp. chili powder
1 tsp. turmeric powder
2 tsp. garam masala
3 tbsp. oil
cilantro to garnish
DIRECTIONS
Take a wide pan. Heat the pan. Add oil.
Once hot, add the bay leaf. Stir for 30 seconds.
Add the diced onion. Saute till translucent.
Add the ginger garlic. Saute till it starts getting some color.
Add all the spices except garam masala.
Caramelize the onion with the spices.
Add the tomatoes. Saute till incorporated, a few minutes.
Add the chicken. Saute for 4-5 minutes.
Add some water and cover till the chicken cooks through.
Add garam masala and cook for a few more minutes.
Garnish with cilantro.
Serve with roti or nan or rice.
